Tagliolini Verdi Gamberetti e Zucchine

Ingredients

1/2 pound green tagliolini
3 tablespoons olive oil
2 cloves garlic minced
6 small zucchini very thinly sliced
1 cup fish stock
1/4 cup brandy
1/4 cup tomato sauce
1 pound small (36 to 45 count) shrimp peeled
salt and red pepper to taste

Directions:

Cook pasta according to package directions.

In a large, heavy skillet, heat the oil over medium-high heat and sauté garlic for 2–3 minutes. Add zucchini strips and sauté for 4–5 minutes, stirring constantly. Stir in the stock, brandy, and tomato sauce and simmer 2–3 minutes. Add the shrimp to the sauce and cook until shrimp are opaque, about 2–3 minutes. When pasta is al dente, add to the skillet, gently toss with the sauce and simmer 1–2 minutes. Season to taste with salt and red pepper. Serve family style on a large decorative platter.
