Sea Scallops with Lemon Thyme, Mint, and Tomato Sauce

Ingredients

TOMATO SAUCE
2 tablespoons olive oil
2 cloves garlic minced
1/4 cup finely chopped onion
2 cups canned diced tomatoes
salt to taste
pepper to taste
SCALLOPS
8 sea scallops scored
olive oil
2 tablespoons fresh mint leaves cut into thin strips to garnish
1 tablespoon lemon thyme leaves to garnish

Directions:

In a heavy saucepan, heat the oil over medium-high heat. Add garlic and onion and sauté for 2–3 minutes. Add the tomatoes, bring to a boil, reduce heat to low, and simmer for 8–10 minutes. Season to taste with salt and pepper.

Lightly brush scallops with oil and season with salt and pepper. In a large nonstick skillet, sear scallops over medium-high heat for 2 minutes on each side.

Divide the tomato sauce among appetizer plates and top with 2 scallops each. Garnish with the mint and lemon thyme leaves.
