Marie's Chicken Livers

Ingredients

3 tablespoons olive oil divided
1 (10-ounce) package fresh crimini mushrooms sliced
1/2 teaspoon fresh thyme divided
salt to taste
pepper to taste
1 small onion finely chopped
1 pound chicken liver
1/2 cup dry sherry
1 French baguette sliced

Directions:

In a large skillet, heat 1 tablespoon oil over medium heat. Add mushrooms and cook until softened and browned, about 8–10 minutes. Add 1?4 teaspoon thyme, salt, and pepper and set aside in a small mixing bowl.

In the same skillet, heat another tablespoon oil. Add onion and sauté until light brown. Add remaining thyme and season with salt and pepper. Add to the mushroom bowl and toss lightly.

In the same skillet, heat remaining olive oil over medium heat. Add chicken livers and sauté until browned, about 4–5 minutes. Increase heat to medium-high, add sherry and cook about 8–10 minutes. Reduce heat, add the mushroom mixture, and simmer about 8–10 minutes. Serve with the sliced baguette.
