Chicken Satay

Ingredients

2 (6 to 8 ounce) chicken breasts
2 tablespoons olive oil
salt and pepper to taste
12 wooden skewers, soaked in water for 1 hour
1 cup teriyaki sauce heated over low heat
1/4 cup black and white sesame seeds
lettuce leaves and lime wedges to garnish

Directions:

Gently pound chicken breasts to a uniform thickness and then cut each into 6 strips. Brush with oil and season with salt and pepper. Weave each strip on a wooden skewer.

Heat a stovetop grill over medium heat and grill chicken until seared, about 3–5 minutes on each side. When chicken is done, coat generously with the warm teriyaki and sprinkle with sesame seeds. Serve on a bed of lettuce with lime wedges.
