Citrus Whole Wheat Bread

Ingredients

3/4 cup water
1/2 cup orange juice
2 tablespoons margarine or butter, softened
1 2/3 cups bread flour
1 2/3 cups whole wheat flour
3 tablespoons wheat germ
2 tablespoons dry milk powder
3 tablespoons sugar
1 1/2 teaspoons salt
1 1/4 teaspoons grated lemon peels
3/4 teaspoon grated lime peel
2 teaspoons yeast

Directions:

Make 1 ½-Pound Recipe with bread machines that use at least 3 cups flour, or make 2-Pound Recipe with bread machines that use at least 4 cups flour.

Measure carefully, placing all ingredients in bread machine pan in the order recommended by the manufacturer.

Select Whole Wheat or Basic/White cycle. Use Medium or Light crust color. Do not use delay cycles Remove baked bread from pan, and cool on wire rack.

Success Tip: We found from our testing that the same amount of yeast is needed for both the 1 1/2-pound and 2-pound loaves.

SUCCESS TIP
Fresh lemon or lime peel should be grated from only the outermost colored skin layer of the fruit. The white layer under the skin, called the pith, is bitter be careful not to grate too deeply to avoid having the pith become part of your grated peel.

SUCCESS TIP'
To get the most juice out of an orange, roll a room-temperature orange on a counter top before squeezing. This helps break down its tissue, so more juice can be released.
