King Ranch or Mexican Chicken

Ingredients

1 dozen tortillas
chicken broth
1 cup diced onion
1 can green pepper, diced
1 can cream of mushroom soup
1 can cream of chicken soup
1 tablespoon chili powder
1 (2- to 3-pound) broiler-fryer chicken, cooked and diced
3/4 pound Cheddar cheese, grated
1 can Ro-Tel tomatoes with chilies, or 1 can tomato soup mixed with 1 tablespoon chili powder

Directions:

Line large baking dish with layer of tortillas. Sprinkle with chicken broth. Sauté onions and green pepper and add soups and chili powder. Pour layer of soup mixture over tortillas, then layer chicken, then layer cheese. Repeat layers. Pour over the Ro-Tel tomatoes or the tomato soup with chili powder. If a milder taste is desired, you may use 1/2 can Ro-Tel tomatoes and 1/2 can plain tomatoes. Bake 1 hour in 350° oven. Serve with vegetable salad and Mexican rice or beans.
