Fried Wild Turkey

Ingredients

breast of turkey (domestic turkey may be substituted)
salt and pepper to taste
2 1/2 cups or more buttermilk
2 cups vegetable oil
flour

Directions:

Bone the breast of turkey. Slice the breast in 1/4-inch thick slices or thicker, if desired. Salt and pepper to taste. Soak turkey slices in buttermilk for 2–3 minutes. While turkey is soaking, heat vegetable oil in frying pan. Roll turkey slices in flour. Drop in heated oil (327°) and fry until golden brown. (Do not overcook.) Drain on a paper towel. Best served with cream gravy.
