Real Fried Chicken


Serves: 5

Ingredients

2 cups flour
salt and pepper to taste
1 (2- to 3-pound) chicken, cut up
shortening or lard

Directions:

Mix the flour, salt and pepper in a sack. Shake a few pieces of the chicken in the sack at a time. Starting with the largest pieces, place in a heavy cast-iron skillet in hot grease that is 1/2–1 inch deep. Cook 5–10 minutes, turning frequently so they don’t burn. Reduce heat and continue to cook and turn until golden brown, 20–30 minutes.

The secrets here are: grease, not oil; cast-iron cookware; and not covering chicken while cooking. The only spices are salt and pepper.
