Blue Spruce Olive Chicken Mozzarella

Ingredients

4 chicken breasts
1/4 cup flour
1/4 teaspoon salt
1/4 cup olive oil
1 clove garlic, crushed
1 medium onion, diced
1 (14-ounce) jar spaghetti sauce
1 (8-ounce) can sliced mushrooms
1/2 teaspoon oregano
1/2 cup sliced pimento-stuffed olives
1 (6-ounce) package sliced mozzarella cheese

Directions:

Skin and bone chicken breasts; cut into bite-size pieces. Combine flour and salt in a plastic bag and coat chicken. Heat oil in a skillet and brown chicken. Arrange chicken in shallow 2-quart baking dish, leaving the drippings in the skillet. Sauté garlic and onion in drippings until onion is tender. Stir in spaghetti sauce, mushrooms, oregano, and olives; pour over chicken. Cut cheese slices into strips and place on top of chicken. Bake at 350° until chicken is tender, about 30 minutes.
