Juicy Baked Chicken and Mushrooms

Ingredients

2 tablespoons dried parsley
2 tablespoons dried chives
8 ounces fresh mushrooms, sliced
2 (5- to 6-ounce) chicken breasts, skinned
1/3 cup lemon juice
1/2 teaspoon onion powder
1/2 teaspoon salt (optional)
1/2 teaspoon poultry seasoning
1 1/2 teaspoons unflavored gelatin granules (1/2 package)
1 teaspoon paprika

Directions:

Mix parsley, chives, and mushrooms in a 1-quart casserole. Place chicken on mushrooms. Pour lemon juice over chicken. Sprinkle remaining ingredients over chicken in order given. Cover. Microwave at MEDIUM-HIGH (70%) for 11–14 minutes or until tender. Let stand 3 minutes before serving.
