Cut onions and tomatoes in 1/4-inch slices. Combine remaining ingredients except parsley to make marinade. Make a layer of onions and tomatoes and parsley on a platter; drizzle with half of marinade; repeat layers. Cover tightly with plastic wrap and refrigerate overnight.
