Fettuccine Heaven Salad

Ingredients

Dressing:
1/2 cup extra virgin olive oil
1 medium garlic clove, minced
2 tablespoons balsamic vinegar
1 teaspoon salt
freshly ground pepper to taste

Salad:
1 pound fettuccine, fresh if available
1 medium red onion, diced
1 (3 1/2-ounce) jar capers, drained
1 cup pitted and sliced Greek olives
1 bunch basil leaves, sliced
1 bunch fresh spinach, coarsely chopped (leaves only)
3 pounds ripe tomatoes, diced

Directions:

Dressing:
Shake Dressing ingredients together.

Salad:
Cook fettuccine al dente; drain and toss with Dressing. Add onion, capers, olives, and basil. Just before serving, toss with spinach and transfer to a serving bowl lined with extra spinach leaves. Top with tomatoes and serve at room temperature.
