Caramel Apple Cake

Caramel Apple Cake:
1 1/2 cups biscuit baking mix
2/3 cup sugar
1/2 cup milk
2 cups apples, peeled, cored and sliced
1 tablespoon lemon juice
3/4 cup brown sugar, packed
1/4 teaspoon cinnamon
1 cup boiling water
Sweetened Whipped Cream:
3/4 cup whipping cream
2 tablespoons sugar


Caramel Apple Cake:
Combine baking mix and sugar; stir in milk. Pour into a greased 9"x9" baking pan; top with apples. Sprinkle with lemon juice; set aside. Mix brown sugar and cinnamon; sprinkle over apples. Pour water over the top; bake at 350 degrees for 50 minutes to one hour. Serve with Sweetened Whipped Cream.

Sweetened Whipped Cream:
Blend cream and sugar together in a chilled bowl. Beat with an electric mixer on high speed until stiff peaks form.
