Tomato Salmon Stacks


Serves: 4

Ingredients

8 large tomatoes, sliced into 4 rounds each
2 teaspoons salt
4 (16-ounce) cans salmon, drained, flaked
4 tablespoons lemon juice
16 slices American cheese

Directions:

Preheat broiler. Place 4 tomato slices on a baking sheet covered with foil. Evenly divide salmon among each tomato slice. Sprinkle salmon with lemon juice, then top with another slice of tomato. Season to taste with salt and pepper. Top with cheese. Broil 6 inches from heat, about 5 minutes or until cheese melts. May add extra salt and a little pepper, if desired.

Editor’s Extra: Tuna or chicken are also superb, either canned, vacuum-packed, or freshly cooked. And great to sub Swiss, Cheddar, Muenster, or Colby cheese.
