Southern Breakfast Casserole

Ingredients

1 cup quick cooking grits
1 pound bulk pork sausage
1/2 cup chopped onion
2 eggs, beaten
1 (8-ounce) package shredded Cheddar cheese, divided

Directions:

Cook grits according to package directions. Sauté sausage and onion in a large skillet until onion is tender, stirring to break up sausage; drain grease. Combine grits, sausage and onion, eggs, and 1 1/2 cups cheese. Pour into a greased 9x13-inch pan. Bake 35–40 minutes. Sprinkle with remaining cheese during last 10 minutes of cook time.
