Butter a 9x13-inch dish. In a heavy 3-quart saucepan, cook sugar, corn syrup, and 1 cup cream over medium high heat about 10 minutes, stirring constantly. Insert candy thermometer. From this point on, stir only if necessary to prevent scorching. Very slowly, add remaining 1 cup cream, being sure not to stop the boiling. When thermometer reaches 230°, lower heat and cook slowly to 244°. Remove from heat, then add salt and vanilla; stir only to mix. Pour into prepared dish. When cool, cut into squares; wrap pieces in wax paper.
