Line cookie sheets with parchment paper. Using electric mixer, beat egg whites till frothy. Add salt, then sugar, a tablespoon at a time, while beating on high speed till stiff peaks form. By hand, gently stir in almond extract and almonds. Drop by teaspoon onto prepared cookie sheets. Bake at 300° about 25 minutes, or until cookies are very lightly browned. When cool, peel cookies from paper and store in airtight tin.
