Heat oil or drippings in large heavy skillet till hot; add ham, and cook (in batches, if necessary) on both sides till browned. Set aside, and keep warm. Stir coffee and sugar into pan drippings, scraping bottom well; bring to a boil, then add water and lower heat to a simmer. Simmer uncovered about 2 minutes. Serve gravy over ham.
