Marinate fillets, carrots, mushrooms, and celery in seafood marinade 30 minutes in refrigerator, turning several times to coat evenly.
Cut 4 large sheets of heavy-duty foil. Place equal portions of fish and vegetables onto center of foil sheets. Loosely fold top and ends to seal each packet. Preheat grill over medium-high heat. Grill about 10 minutes, or until fish flake easily with a fork. Poke foil with knife to release steam before opening the packets. Can eat directly from packet, or serve on plates with juice poured over.
