Preheat oven to 375°. Arrange fillets in a baking pan. Brush with a tablespoon of oil. Place tomato slices over fish. Bake about 20 minutes, or until done. Place garlic and olives in blender and blend until finely minced. Add remaining 4 tablespoons oil in a thin steady stream, and blend to form a paste. Spoon evenly over each fillet.
