Cream butter, sugar, egg, and vanilla. Gradually stir in flour until well blended. Refrigerate, covered, at least 2 hours. On a lightly floured surface, roll dough out 1/4 inch thick. Using cookie cutters, cut into desired shapes. Bake on parchment-lined cookie sheets at 350° for 8–10 minutes. Cool on cookie sheets 5 minutes before transferring to a wire rack to cool completely.
