Preheat oven to 450°. Mix together cornflakes, salt, and pepper in a shallow bowl. Rinse fillets; pat dry. Dip fillets in egg whites, then coat with crumb mixture. Place fillets in a baking pan lined with foil and sprayed with nonstick spray. Bake about 10 minutes, or until fish flake easily when tested with a fork.
