Sticky Sesame Chicken

My husband and I met at a Chinese New Year party. Thus, once a year- in January or February -we celebrate Chinese New Year. Part of our celebration includes homemade Chinese food. I have not yet perfected at-home Chinese food, but I have found one perfect recipe that I love. It always turns out fabulous, and gets extra bonus points for being quick and easy to prepare.

Sticky Sesame Chicken

1 1/2 to 2 pounds frozen popcorn chicken
6 Tablespoons honey
4 Tablespoons ketchup
2-4 Tablespoons sugar (depending on how sweet you like it)
2 Tablespoons white distilled vinegar
2 Tablespoons soy sauce

1-2 Tablespoon corn starch
Green onions
Sesame seeds

Cooked Rice

Directions: Cook frozen chicken according to package directions. While the chicken is cooking, whisk together the honey, ketchup, sugar, vinegar and soy sauce in a large sauce pan over medium heat. Bring the sauce to a boil then simmer on low until sauce begins to thicken. Mix in the corn starch until desired consistency. Add cooked popcorn chicken to the saucepan, stirring to coat with the sauce. Serve the chicken immediately over cooked rice. Garnish with green onions and sesame seeds. Enjoy!
