Tomato Bread Salad

Ingredients

6 slices day-old rustic Italian bread, crusts removed
1 cup water
2 tomatoes, chopped
1/4 cucumber, thinly sliced
1 bunch green onions, thinly sliced
25 leaves fresh basil, torn
3 tablespoons fresh parsley, chopped
5 tablespoons olive oil
3 tablespoons red wine vinegar
salt and pepper to taste

Directions:

Tear or slice bread into 3/4-inch pieces; place in a large salad bowl. Sprinkle bread with water until moistened but not soggy. Add remaining ingredients; toss to mix well. Serve immediately.
