Easy Batter-Crust Pizza

Ingredients

1 1/2 pounds ground beef or ground pork sausage
1 cup plus 2 tablespoons all-purpose flour, divided
1 teaspoon Italian seasoning
1/2 teaspoon salt
1 1/2 teaspoons pepper
2/3 cup milk
2 eggs, beaten
1/4 cup onion, chopped
Optional: 1 (4-ounce) can mushrooms, drained
1 (8-ounce) can pizza sauce
1 cup shredded mozzarella cheese

Directions:

In a skillet over medium heat, brown beef or sausage; drain well. Meanwhile, lightly grease a 12" round pizza pan; sprinkle with 2 tablespoons flour and set aside. In a small bowl, combine remaining flour, seasonings, milk and eggs; whisk until smooth. Pour batter into pizza pan, tilting pan so batter covers the bottom. Spoon beef or sausage over batter; top with onion and mushrooms, if using. Bake on the lowest oven rack at 425 degrees for 25 to 30 minutes, until deeply golden. Spread pizza sauce over pizza; top with cheese. Bake for an additional 10 to 15 minutes. Cut into wedges to serve.

Tip: Homemade pizza is super for easy, thrifty family meals. Top an oven-ready crust with pizza sauce, then check the fridge for leftover cooked veggies and meat. Add toppings and cheese as you like, then pop it into a 400-degree oven until heated through and the cheese is melted. Yum!
