Huli Huli Chicken

Ingredients

3 chicken fryers, halved or quartered
Hawaiian sea salt and pepper to taste

Sauce:
1/4 cup catsup
1/4 cup shoyu ( soy sauce )
1/2 cup chicken broth
1/3 cup sherry
1/2 cup fresh lime juice
1/4 cup frozen pineapple juice concentrate
1/2 cup brown sugar
1 tablespoon crushed fresh ginger
1 clove garlic, crushed
1 teaspoon Worcestershire sauce

Directions:

Thread chicken onto rotisserie spit. Use clean 1 1/2-inch paintbrush to coat Sauce over cleaned chicken pieces, then sprinkle with salt and pepper. Grill on rotisserie, turning and basting frequently with Sauce until done, 45–60 minutes.

For grilling, place on rack over coals, turning and basting for about 45 minutes. Or roast in 325° preheated oven, basting frequently, for 90 minutes.

Sauce:
Mix Sauce ingredients in bowl.


Fun Fact: The origin of the ukulele can be traced to immigrant Manual Nunes who arrived in Hawaii from Madeira in 1879 to work in the sugar cane fields. He is responsible for transforming the Portuguese braguinha into the Hawaiian ukulele. Nunes established one of the first ukulele manufacturing companies and remained in business for over 40 years. The ukulele remains Hawaii’s most popular musical instrument.
