Hibachi-Style Teriyaki Chicken

Ingredients

1 cup soy sauce
1 cup chicken stock
1/2 cup brown sugar
1 cup mirin or sake
2 tablespoons grated onions
2 cloves garlic, minced
2 pounds chicken pieces

Directions:

Put soy sauce, chicken stock, and brown sugar in a saucepan. Dissolve sugar over low heat. Add mirin or sake, onion, and garlic. Cook and stir 5 minutes over low heat. Cool sauce. Pour over chicken and refrigerate 5 hours or overnight. Turn occasionally.

Cook over coals, brushing on marinade while you cook. Or cook in oven at 350° for about 45 minutes in sauce. Turn chicken once.


Fun Fact: Alaska is so big it has its own time zone, Alaska Standard Time, which is one hour behind Pacific Standard Time. The Aleutian Islands west of Umak Island and the Hawaiian Islands are on Hawaii-Aleutian Time, which is an hour behind Alaskan time.
