Chicken/Mushroom Stroganoff

Ingredients

2 chicken breasts, skinned and boned
1 cup diced carrot
1/2 cup chopped onion
2 garlic cloves, minced
2 cups mushrooms
1 tablespoon water
1/2 cup nonfat cottage cheese
2 tablespoons nonfat sour cream
2 tablespoons Dijon style mustard
1 tablespoon soy sauce (low sodium)
3 cups eggless noodles, cooked in water

Directions:

Wrap chicken, carrots, onions, and garlic in aluminum foil. Place in oven and bake at 375° for 30 minutes. While chicken is cooking, sauté mushrooms in large skillet, using 1 tablespoon of water. Place cottage cheese, sour cream, and mustard in blender and blend until smooth. Cut cooked chicken into strips, and place in large bowl. Add vegetables, cottage cheese mixture, and soy sauce; mix well. Serve over noodles.
