Chicken Satay with Peanut Sauce

Ingredients

2 whole fryer chicken breasts, skinned and boned
1/4 cup soy sauce
1/4 cup dry white wine
1 tablespoon honey
1 tablespoon grated fresh ginger root
Peanut Dipping Sauce

Peanut Dipping Sauce:
1/2 cup peanut butter
1/4 cup unsweetened coconut milk
2 tablespoons soy sauce
1 tablespoon honey
2 tablespoons minced fresh cilantro
1 clove garlic, minced
1/8 teaspoon hot pepper sauce

Directions:

Flatten chicken breasts and slice into strips about 1 inch wide. Thread on skewers and place in shallow pan. Combine soy sauce, wine, honey, and ginger; pour over chicken and marinate 30 minutes, turning occasionally to coat. Drain; broil or grill until chicken is cooked and juices run clear when cut. Serve warm with Peanut Dipping Sauce.

Peanut Dipping Sauce:
Combine all ingredients until well blended. Makes about 3/4 cup.
