Chicken Piccata

Ingredients

4 boneless, skinless chicken breasts, split
1 cup flour
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon white pepper
4 teaspoons oil
1 tablespoon butter
1 tablespoon chopped basil
1 tablespoon lemon juice
2 teaspoons white wine

Directions:

Flatten chicken breasts between 2 sheets of plastic wrap. Coat chicken with flour, garlic powder, salt, and pepper. Sauté each breast in 1 teaspoon oil in nonstick skillet. Keep warm in 200° oven. In same skillet, melt 1 tablespoon butter; add basil. When butter bubbles, splash with lemon juice and wine. Pour over warm chicken breasts. Serve with rice or pasta and a good salad.
