Lemon Squares

Ingredients

2 cups flour
1/2 cup powdered sugar
1/2 pound melted butter
4 eggs, beaten
2 cups sugar
4 tablespoons flour
1 teaspoon baking powder
1/2 teaspoon salt
4 tablespoons lemon juice

Directions:

Mix first 3 ingredients and press in a large 12x18-inch pan or cookie sheet with rim. Bake at 325° for 20 minutes.

Mix beaten eggs with remaining ingredients. Spread over crust and bake for 30 minutes at 325°. Cut in squares and dust with powdered sugar.

Editor's Extra: This is a “while” recipe . . . while the crust is baking, you throw the filling ingredients together. Though not lightning quick, it’s big on easy, and even bigger on taste.
