Heavenly Homemade Chocolate Mousse


Serves: 8

Ingredients

1 (12-ounce) package chocolate chips
4 eggs, pasteurized
4 tablespoons strong hot coffee
6 tablespoons rum
1 1/2 cups boiling milk
whipped cream for garnish

Directions:

In blender, combine first 5 ingredients and blend for 2–3 minutes. Place in individual dishes. Chill overnight. Top with whipped cream just before serving.

Fun Fact: Out of whipped cream for garnish? If you have ice cream, you can soften and beat it just like you would whipping cream. Be aware it won’t last as long since it will melt. Very cold evaporated milk beaten in a cold bowl with cold beaters whips as well. Though these are both "temps," they are great for on-the-spot single-serving toppers.
