Caramel Pecan Chocolate Mousse Pie

1 (12-ounce) jar caramel ice cream topping, divided
1 chocolate pie crust
1 cup chopped pecans
2 cups heavy cream
1 (3-ounce) package instant chocolate pudding
2 cups frozen whipped topping, thawed


Pour 1/2 the caramel topping in chocolate pie crust. Sprinkle pecans over caramel topping. Beat heavy cream and pudding mix at high speed until stiff peaks form. Spoon over caramel and pecans. Freeze. Before serving, allow pie to soften about 15 minutes at room temperature. Add mound of whipped topping to top of individual servings, and drizzle with remaining caramel topping.
