Ten-Minute Cioppino

Ingredients

1 tablespoon olive oil
1 (12-ounce) package frozen seasoning blend (chopped onion, celery, pepper)
2 teaspoons minced garlic
2 (14 1/2-ounce) cans Italian-style stewed tomatoes, undrained
1/2 cup water
6 ounces fresh or frozen peeled, deveined shrimp
6 ounces fresh or frozen fish fillets, cut into 1-inch pieces
3 tablespoons chopped fresh basil

Directions:

Heat oil in a large saucepan. Add frozen vegetables and garlic. Cook and stir 4–5 minutes. Stir in tomatoes and water. Bring to a boil. Stir in shrimp and fish; return to a boil; reduce heat. Simmer, covered, 2–3 minutes until fish flakes easily with a fork and shrimp turn opaque. Stir in basil.
