Open-Faced Reubens

Ingredients

1/2 onion, sliced
1 tablespoon butter
3/4 pound ground chuck
1/4 teaspoon each: salt and pepper
4 slices rye bread
8 ounces sauerkraut, drained, rinsed
4 slices Swiss cheese
Russian dressing
Kosher dill pickle slices

Directions:

Sauté onion in butter; set aside. Season meat and shape into 4 flat square-ish patties; fry or broil on both sides. Place patties on bread slices; top with sauerkraut, onion, and cheese. Broil on rack in broiler pan until cheese is melted. Serve with dressing and pickle slices.
