Hot Chic 'n Cheese Packets

Ingredients

4 Italian bread buns (or ciabatta rolls)
3 tablespoons olive oil, divided
3 tablespoons brown mustard
8 ounces Gouda cheese, shredded
1/2 pound sliced fresh mushrooms
3 green onions, chopped
2 teaspoons minced garlic
2 cups shredded cooked chicken
3 cups baby spinach
Italian seasoning to taste

Directions:

Make a well in buns by pulling out some of the insides. Drizzle with a tablespoon of olive oil and all the mustard. Sprinkle half the cheese on bottom half of roll. In skillet over medium heat, sauté mushrooms, onions, and garlic in a tablespoon of olive oil; set aside. Put shredded chicken in buns. Add remaining tablespoon of oil to skillet; sauté spinach 2 minutes; season to taste. Divide mushroom mixture and spinach into bun bottoms. Top with remaining cheese; cover with bun tops. Wrap each bun tightly in foil. Bake until cheese melts at 400°, about 20 minutes.
