Mom’s Macaroni & Cheese

Ingredients

1 (8-ounce) package elbow macaroni
1 (5-ounce) can evaporated milk
1/3 cup water
1 cup milk
3 tablespoons butter
3 tablespoons all-purpose flour
1/2 teaspoon salt
1 tablespoon minced, dried onion
1 1/2 cups shredded sharp cheddar cheese, divided

Directions:

Cook one cup macaroni according to package instructions; drain. Reserve remaining macaroni for another recipe. Combine evaporated milk, water and milk; set aside. Melt butter in a medium saucepan. Add flour and salt, whisking until flour dissolves. Add onion and evaporated milk mixture, stirring well to avoid lumps. Add cheese. Simmer until cheese melts and sauce is thickened, stirring frequently. Stir in cooked macaroni. Pour into a greased 8"x8" baking pan. Top with remaining cheese and bake, uncovered, at 350 degrees for 30 minutes, or until bubbly and lightly golden.
