Apricot-Glazed Chicken Breasts

Ingredients

4 boneless, skinless chicken breasts
salt and pepper to taste
1 (12-ounce) jar apricot jam
2 tablespoons honey
2 tablespoons Dijon style mustard

Directions:

Arrange chicken in a 13"x9" glass baking pan sprayed with non-stick vegetable spray. Sprinkle with salt and pepper; set aside. Bring jam, honey and mustard to a boil in a small saucepan over medium heat. Reduce heat to low; simmer until mixture is thickened and reduced by half. Spoon apricot sauce over chicken breasts, coating evenly. Bake at 425 degrees, for 30 to 40 minutes, basting with sauce every 10 minutes. Continue to bake until juices run clear when chicken is pierced with a fork.
