Mediterranean Skillet Chicken

Ingredients

2 tablespoons olive or vegetable oil
4 boneless skinless chicken breast halves (1 pound)
1 (14 1/2-ounce) can Italian style stewed tomatoes, undrained
1/2 cup sliced ripe olives
1 teaspoon grated lemon peel

Directions:

Heat oil in 12-inch nonstick skillet over medium-high heat. Cook chicken in oil 5 minutes, turning once, until brown.
Stir in remaining ingredients. Heat to boiling reduce heat to low. Cover and simmer 15 to 20 minutes or until juice of chicken is no longer pink when centers of thickest pieces are cut.

Betty's Tip
There are many different olive oils available. Extra virgin olive oil comes from the first pressing of the olives and has a fruity flavor and deep golden to green color. Virgin olive oil is also from the first pressing of olives, but has a slightly more acidic flavor. Pure olive oil or olive oil is a combination of refined olive and virgin or extra virgin olive oil.
