Six "S" Salad

Ingredients

2 (11-ounce) cans mandarin oranges, well drained
1/2 - 1 head bibb lettuce, or 1 head red leaf or combination
1 bunch or more spinach
Chinese pea pods, blanched (optional)
broccoli florets, fresh, cut small
1/2 cup chopped fresh parsley
1 large red onion, or 1 bunch green onions, sliced thin
1 (7 1/2-ounce) jar sunflower seed, dry-roasted
1 (6- to 8-ounce) carton frozen orange juice concentrate
1/2 cup (or more) mayonnaise
seasoned cooked chicken strips, heated

Directions:

Place Mandarin oranges in bottom of large salad bowl; add torn lettuce, spinach, pea pods, broccoli, parsley, onions, and sunflower nuts. Cover. Chill.

Whisk orange juice concentrate and mayonnaise until smooth; adjust mayonnaise to keep tart taste. Pour dressing to coat, but not drench salad, just before serving. Toss. Serve remaining dressing on the side. Serve topped with 3–4 hot seasoned chicken strips for each serving.

Optional additions: May add one or more or substitute, hard-cooked eggs, sprouts/bamboo shoots, cauliflower florets, olives/water chestnuts, cherry tomatoes/radishes, jicama, sliced thin; bacon, shrimp, nuts.

Variation for Dressing: Pineapple chunks and pineapple juice with mayonnaise and orange juice concentrate.
