Ingredients

1 (16-ounce) can black-eyed peas or crowder peas, drained
1/3 cup finely chopped green pepper
1/3 cup finely chopped onion
3 cloves garlic, finely minced
1/3 cup Italian salad dressing
salt, pepper, and Tabasco to taste
1 jalapeño pepper, finely chopped

Directions:

Mix all ingredients together and serve with tortilla chips.


Fun Fact:Idaho’s nickname is “The Gem State.” Gems from all around Idaho give credence to its nickname—jasper from Bruneau, opal from Spencer, and jade, topaz, zircon, and tourmaline from around the state. The same geological processes that gave Idaho its mountains also gave it Star Garnets, the state gem. This stone is considered more precious than either Star Rubies or Star Sapphires. The color is usually dark purple or plum.
