Gazpacho Dip

Ingredients

1/2 cup vegetable oil
3 tablespoons vinegar
1 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon pepper
4 or 5 green onions, thinly sliced
2 or 3 tomatoes, chopped
1 teaspoon coriander
1 (4-ounce) can chopped black olives, undrained
1 teaspoon chopped parsley
2 ripe avocados, chopped

Directions:

Combine vegetable oil and vinegar in bowl; blend well. Add salt, garlic powder, and pepper; mix well. Add green onions, tomatoes, coriander, black olives, green chiles, and parsley; mix well. Chill. Fold in avocados just before serving. Serve with Doritos.
