Two Pizzas in a Skillet

Ingredients

1 loaf round bread
5 tablespoons olive oil, divided
4 to 6 tablespoons Italian seasoning
2 (8-ounce) cans tomato sauce
4 cups shredded cheese

Directions:

Cut bread in half, making 2 round loaves. Heat half the oil in a frying pan until it just begins to smoke. Sprinkle in herbs. Add 1 can tomato sauce; stir as it begins to bubble. Sprinkle half the cheese evenly over sauce. Lay 1 round loaf cut-side-down in sauce. Let it simmer about 30 seconds. Turn it upside down onto a plate and cut into wedges to serve. Repeat with other half of bread loaf.

Editor’s Extra: Mushrooms, pepperoni, etc. may be added to skillet, if desired.
