Red Bean Rally

Ingredients

1 (8-ounce) package dried kidney beans
1 cup raw rice, cooked
10 to 12 pieces thick sliced bacon or salt pork, chopped
1 cup frozen seasoning blend
1 to 3 clove garlic, minced

Directions:

Put beans in large pot, and cover with water. Cook, covered, at a slow boil 3–4 hours, adding water as needed (juice should be thick).

Fry bacon, reserving drippings; add to beans. Sauté onion and garlic in drippings; add to beans along with salt to taste. Serve beans, bacon, and juice over hot rice.

Editor's Extra: If you can't find frozen seasoning blend in the frozen vegetable section of your grocery store, you can make up your own mix of chopped onions, bell peppers, celery, and parsley.
