Black Beans, Chicken, and Rice

Ingredients

2 (7-ounce) boxes Spanish rice
2 (6-ounce) packages cooked chicken strips, chopped
5 slices bacon, cooked, crumbled
1 1/2 cups shredded mozzarella cheese
1 (15-ounce) can black beans, rinsed, drained

Directions:

Prepare rice according to package instructions. Mix remaining ingredients in a large bowl and set aside. When rice is just cooked, mix chicken mixture into rice, cover, and let stand about 10 minutes. Serve topped with chopped tomato and green onions.
