Shrimp Quesadillas

Ingredients

4 large flour tortillas, divided
2 cups shredded pepper jack cheese, divided
1 (12-ounce) bag frozen salad shrimp, rinsed, drained
1 cup sour cream
1 cup frozen seasoning blend, thawed

Directions:

Place 2 tortillas on lightly oiled flat baking pan. Sprinkle with half the cheese. Top cheese with shrimp. Mix sour cream with seasoning blend, and spread over shrimp. Top with remaining cheese. Place remaining tortillas on top, and brush lightly with oil. Bake at 375° for 10–15 minutes, or until cheese melts and tortilla surface is slightly crispy. Serve with salsa.

Editor's Extra: If you can't find frozen seasoning blend in the frozen vegetable section of your grocery store, you can make up your own mix of chopped onions, bell peppers, celery, and parsley.
