Potato Crusted Fish Fillets


Serves: 6

Ingredients

2 eggs, beaten
1/2 cup fresh lemon juice
1 teaspoon Greek seasoning
1 (4 ounce) pounch roasted garlic mashed potatoes
6 white fish fillets, about 3/4 inch thick

Directions:

Preheat oven to 400°. Cover broiler pan with foil, then spray foil with nonstick cooking spray. In a shallow bowl, beat together eggs and lemon juice; add seasoning. Empty pouch of potatoes into separate shallow bowl. Dip fillets in egg mixture, then coat on both sides with dry potatoes. Place fillets on prepared pan, and bake in preheated oven 10–15 minutes. Set oven to broil, then broil 1–2 minutes, or till lightly browned. (Watch closely, or set your timer.)

Editor’s Extra: Fillets may be grilled or sautéed in hot oil.
