Meatball Quesadillas

Ingredients

1/2 cup chopped onion
2 tablespoons olive oil, divided
4 large flour tortillas
1 package frozen pre-cooked meatballs, any flavor, thawed, sliced
1 (8-ounce) bag shredded pizza cheese blend or quesadilla cheese

Directions:

Sauté onion in a tablespoon of olive oil to soften. Drain and set aside. Preheat oven to 375°. Spread a teaspoon of oil with the back of a spoon or a pastry brush on one side of flour tortilla. Place tortilla, oiled side down, on cookie sheet. Layer sliced meatballs, onions, and cheese on top. Top with a second tortilla; press together slightly and brush top with olive oil. Repeat process with remaining ingredients. Bake 10–15 minutes, or until tortillas are brown and crisp. Cut into wedges to serve.
