Crisp Corn Bread Salad

Ingredients:
| 1 cup | coarsely crumbled corn bread |
| 1 (8 3/4-ounce) can | whole kernel corn, drained |
| 1/2 cup | chopped onion |
| 1/2 cup | chopped cucumber |
| 1/2 cup | chopped broccoli |
| 1/2 cup | chopped green pepper |
| 1/2 cup | chopped sweet red bell pepper |
| 1/2 cup | chopped, seeded tomato |
| 1/2 cup | peppercorn ranch salad dressing |
| salt and pepper, to taste | |
| leaf | lettuce , optional |
Directions:
In a large bowl, combine the corn bread, vegetables, salad dressing, salt and pepper. Cover and refrigerate for 4 hours. Serve on a lettuce-lined plate if desired. Yield: 6 servings.
