Baked Red Snapper Recipe

Serves: 4

Too often, the recipes for fish are too complicated. What I like about this one is its simplicity, and it's lovely to serve for a dinner party. The taste is incredible!
Cooking for two? Then use two fillets. Decrease topping amounts to 2 tbsp. of each ingredient.

Cook Time: 23 minutes

Ingredients:

For the Snapper:
4 red snapper fillets (8-10 oz. each)
1 red bell pepper, diced small
1 small yellow onion, diced small
1 stick butter (half cup)
salt, to taste,
black pepper, to taste
For the Topping:
4 tablespoons bread crumbs
4 tablespoons , freshly grated Parmesan cheese
4 tablespoons parsley, minced finely

Directions:

Preheat your oven to 350 degrees.

Coat the bottom of a 13x9 baking dish with cooking spray.

Sprinkle the chopped red bell pepper and chopped onion in the bottom of your baking pan.

Season the fillets generously with salt and black pepper, then lay them on top of the bed of peppers and onions.

Slice the butter into slivers and completely cover the fish. Add remainder of butter to the bottom of the baking dish.

Bake in the middle of your oven for about 20 minutes. You'll know when it's done when it flakes easily with a fork.

How To Make The Topping

Meanwhile, make the topping: into a small bowl, thoroughly mix together the bread crumbs, parmesan and minced parsley.

About 5 minutes before the fish is done, turn on your broiler. (If your broiler and oven are the same -- like mine -- then simply remove the baking dish once the fish is done, and turn your oven to broil.)

Sprinkle the tops of the snapper fillets with the parmesan topping. THIS IS IMPORTANT: then spoon the buttery liquid from the bottom of your baking dish on top of the topping until it is completely moist. I use an oven mitt to tip my baking pan slightly so it's easier to spoon the liquid.)

Place the topping-covered fish under the broiler for about 3 minutes, until the top is a beautiful golden brown. Watch closely. It will burn easily. I usually start checking it after 2 minutes.

How To Serve The Red Snapper

Once the top is a golden brown, remove from the broiler.

Place each fillet in the center of your serving plate, then scatter the cooked peppers and onions on top. The vegetables will be crisp-tender. (If you prefer them to be soft, then soften them in a little butter before scattering them in the pan at the beginning. I like the crisp-tender texture, but I know some people like their peppers and onions fully softened.)
